Folders transferred by defaults :
My Documents,My Pictures,Desktop,Favourites
Files types transferred by default :
*.ch3 *.csv *.dif *.doc *.dot *.dqy *.iqy *.mcw *.oqy *.pot

To use User State Migrating Tool(USMT) follow this :
Copy the migrating user files and settings
Go to Start >> all programs >> accessories >> system tools >>
Files and settings transfer wizard. A screen will appear below this

From here Choose "Old computer" and click next
